Observation (CORRECTED DURING INSPECTION): Found equipment put away with food debris still on them (slicers/peelers), and items were put away wet.
Corrective Action(s): Must ensure all food is removed from all equipment and utensils after washing.
Must also ensure all containers are properly air dried before stacking and putting away.

Observation: Heavy grease and food debris accumulation under, behind and between all equipment and shelving units and inside drawers.
Corrective Action(s): A thorough and deep cleaning of entire kitchen area is required. Remove all black grease and food build up under, beside and between all equipment ( cooking, coolers, freezers) and shelving units/ counters, as well as inside drawers.

Observation: 1. Gauge on dishwasher only reaches 177 F, temperature at the plate was 79 C (174F).
2. Deep freeze has broken seals around the lid, and duct tape is holding the front of the lid together.
Corrective Action(s): 1. Gauge on the dishwasher requires calibration or changing as temperature at the gauge should read a minimum of 180 F when the dishwasher is sanitizing.
2. Replace seals on deep freeze, and remove tape as it is not a food grade material.

Corrective Action(s): Ensure all walls, shelves, inside drawers, floors and any other surfaces with in the kitchen are made of materials that area easily cleanable, and durable. Remove all cardboard, tape, plastic lining, metal foil etc. from any and all surfaces and floors.
