302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) Sanitizer in 3rd compartment at 3 comp sink had <50 ppm QUATS residual (almost zero).
2) No surface sanitizer available in kitchen or in food prep areas.
Corrective Action(s): 1) Operator remade solution in the 3 comp sink with Quat solution and achieved 200 ppm QUAT residual. As discussed, obtain test strips.
2) Operator moved bleach water sanitizer from washroom (which needs to be remade as it is at >200 ppm Chlorine residual and is bleaching out test strip). Ensure that this solution is at 100 ppm chlorine residual at all times (1/2 teaspoon bleach per 1 liter of water).

Observation (CORRECTED DURING INSPECTION): Two compartment sink is being used as equipment rinse sink and handwash sink, but there were utensils/blender items in both compartments (ie. no dedicated handwashing sink)
Corrective Action(s): As discussed with operator, there must be one dedicated handwashing station available, unobstructed (not filled with food equipment) and accessible at all times. Operator removed equipment from one of the sinks.

Observation: Rodent droppings observed by back entrance in corners and underneath/around boxes.
Corrective Action(s): 1) Remove droppings and sanitize all areas
2) Premises recently had pest control visit. Copy of report forwarded to district EHO. Pest control company to visit again in 2 weeks. If droppings are seen in any of the food prep/kitchen areas, you will need to obtain pest control services immediately.
