New hot holding unit installed for the Burek meat and cheese pies: 64 deg C NOTE: do not use the built-in thermometer for the machine -place the thermometer at food level for accurate readings Operator has all the workers FOODSAFE Level 1 certified -copies onsite 2-door display will only be used for shelf-stable foods -a sign posted there as a reminder for the workers Meat slicer is being time tracked when disassembling, cleaned and sanitized for every 2 hours (minimum 4 hours)
