Observation (CORRECTED DURING INSPECTION): Knives were found stored in Quats sanitizing solution.
Corrective Action(s): Discontinue the practice of storing utensil, as this may result in potential chemical contamination of foods. Knives were removed from the sanitizing solution at the time of inspection.

Main Deli:
-Walk-in cooler was at 3C.
-Display cooler was at 3C.
-Cheese cooler was at 4C.
-Customer area display coolers were at 4C.
-Chicken was cooked to greater than 74C.
-Temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 77C on the dish surface (minimum of 71C required for proper sanitizing).
-Quats sanitizer pails, spray bottles, and dispenser at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Equipment clean and sanitary.
-Slicer disassembled for cleaning and sanitizing every 4 hours.
-General food storage practices good at the time of inspection.
-Foods stored off the ground and protected from potential contamination.
-General sanitation good at the time of inspection.

Deli Island:
-Sandwich cooler was at 4C.
-Sandwich display cooler was at 4C.
-Hot holding was greater than 60C.
-Quats sanitizer spray bottle was at 200ppm.
-Handwash station accessible abd supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.

Customers Area:
-Hot holding was greater than 60C.
-Chicken time stamped and removed at 4 hours.
-Refrigeration units were at 4C or less.

COVID-19:
-Workplace COVID-19 safety plan completed.
-Markers placed on the floor to promote physical distancing.
