Observation (CORRECTED DURING INSPECTION): Grilled chicken made an hour ago was 30C in the walk-in cooler.
Corrective Action(s): Directed the operator to partially open the lid of the container to speed up cooling.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Salad rolls stored in ambient temperature at front display. Operator stated that staff replenish salad rolls from cooler every 2 hours. No written records were maintained.
Corrective Action(s): ***Implement a system to time stamp the foods that are not stored below 4C (1 day).

Observation (CORRECTED DURING INSPECTION): Clean utensils/eqiupment were stored with greasy containers and unclean non-food contact equipment in the same storage bin..
Corrective Action(s): Protect/store clean utensils/equipment in a sanitary manner. Operator removed the greasy container and non-food contact equipment.
Clean/sanitze all the utensils/food-contact equipment (immediately).

Observation (CORRECTED DURING INSPECTION): 1. Wiping rags were stored in sanitizing solution bucket however, the solution was mirky and < 50 ppm bleach.
2. Food debris still observed at the rim of the blade holder of the meat slicer.
Corrective Action(s): 1. Wash/clean wiping rags more often when they become dirty. Replenish new sanitizing solution at least every 2 hours or when solution becomes dirty. Operator made a sanitizing solution 100-200 ppm bleach.
2. Clean/sanitize meat slicer more thoroughly (prior to use or immediately).

Observation: 1. The plastic containers that store food and are used for microwaving are not a suitable design/material.
2. Spring rolls were packaged in plastic milk crate lined with waxy paper from the food supplier. After spring rolls are used, the milk crates are returned to the supplier. The milk crates appear to be clean and in good condition.
Corrective Action(s): 1. ***Do not microwave food in these containers (immediately).
***Do not use these containers to store food (3 days).
***Use food containers that are NSF approved or is a food-grade material.
2. Ensure that the supplier cleans/sanitizes the milk crates for food storage. Provide contact information of the supplier to EHO (2 days).

- Small portions of bean sprouts stored in room temperature used during food service, while bulk of the sprouts were stored in cooler.
