Observation: 1. Multiple coolers observed to have grime build up in the pipe and tubes.
2. Food debris observed underneath shelving in the walk in cooler and along the crevices of the floor.
3. Food debris observed in multiple coolers. Food would drop from the inserts to the bottom compartments.
4. Grease and grime build up behind the cookline. Please deep clean.
5. Food debris observed at the back, up against the wall underneath the prep tables.
6. Walk in cooler fans observed to be dusty and moldy. Please take down and clean.

- All coolers 4C and below
>>> Please cover the inserts during down time to ensure temperatures are maintained
- All freezers -18C and below
- All hot holding and hot cabinet measure 60C and above
- QUAT sanitizer measure 200ppm in spray bottle
>>> Some spray bottles and bucket measure 50-100ppm. Instructed staff to refresh sanitizer.
- Low temperature dishwasher measure 100ppm chlorine at final rinse at plate level.
- Temperature log is maintained
- Kitchen manager has valid FOODSAFE certificate
- No signs of pests observed during inspection, Ecolab routinely checks facility for pests, last pest report indicated that a interior trap has trapped a rodent.

- Ice machine observed to be clean and sanitary, scoop stored separately.
- Ventilation hood observed to be well maintained.
