Observation: Ice machine has mould growth in the icemaking components. Mould may contaminate the ice. [Date to be corrected by: immediately]
Corrective Action(s): Empty the ice machine and discard the ice. Clean the ice machine throughly: 1. soap and water 2. rinse 3. 100 ppm bleach sanitizer (1/2 teaspoon bleach in 1 L of water). Clean ice machine every 1-2 months to prevent the growth of mould.

- the topside of the grill unit
- corners of kitchen

All handsinks equipped with hot and cold running water, liquid soap and paper towel
High-temperature dishwasher reached 71C at the plate level upon final rinse cycle (min/max probe thermometer); 82C at the manifold
Chlorine bleach sanitizer available throughout the premise in spray bottles and buckets at 100 ppm (1/2 teaspoon bleach in 1 L of water) *Please label the spray bottle "BLEACH" to identify the contents. Please also keep all wiping cloths stored in the bleach solution when they are not being used to wipe surfaces
All coolers operating at </= 4C; Freezers operating at </= -18C; Hot-holding at >/= 60C
Foods stored 6" off the ground, mostly covered and with raw proteins below ready-to-eat foods
