Observation: - Minimal amount of mouse droppings noted on lower shelving in storage area in kitchen and on floor adjacent to ice machine in drink service area.
Corrective Action(s): - Clean up droppings from areas noted above and disinfect areas with bleach solution.

- Coolers were operating at acceptable temperatures (4C or colder) and freezers were maintaining products in a frozen state:

- Chest freezer (kitchen) -18C
- Frigidaire chest freezer (front) -15C

- Hot holding temperatures of potentially hazardous foods were adequate (60C or higher)
- Tofu, pork, soup in hot holding unit 67-72C
- Cooked rice in rice cooker 71C
- High temperature dishwasher operational. Final rinse measured 72.6C at dish surface with min/max thermometer
- Bleach sanitizer solution present in bucket with wiping cloths. Concentration measured 100ppm chlorine.
- Ice scoop stored in a sanitary manner outside of ice machine. *Ensure interior of ice machine is cleaned regularly according to manufacturer's instructions.
- Food in storage (coolers, freezer, dry storage) covered/wrapped and protected from contamination.
