Observation: 1) Foods stored in kitchen prep cooler had internal temperature >4'C. Raw chicken, fish fillet, salmon, soup, cooked chickens all had internal temperature ranging in between 12.4~14.1'C. Pictures taken. All discarded at this time. Repeated violation.
2) Dairy/Juice in a small cooler at servery ~7'C. Moved to the back cooler at this time.
Corrective Action(s): Ensure the prep cooler is repaired. Do not store any food in this cooler until repaired and approved by the health inspector. Monitor the small cooler. If temperature does not decrease back to 4'C or below after 1 hour, call for service.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied.
-Refrigeration temperatures other than the prep cooler satisfactory; Hot-holding temperatures satisfactory.
-Low temperature dishwasher achieved >50ppm chlorine at plate level after final rinse.
-200ppm QUAT available in buckets throughout.
-No evidence of pest activity observed.
-General sanitation satisfactory, but could be improved by cleaning hard to reach areas on a more regular basis.
-General food storage practice satisfactory.
-Washroom handsinks satisfactory.

Correction Order issued at this time for repeated violations mentioned above. Failure to comply with this Order will automatically result in issuance of Violation Ticket(s) - 1) each violation and 2) for not complying with this Order.

Please contact the health inspector for any questions or concerns. Follow-up inspection will be conducted tomorrow. Spoke with the owner on phone at the end of the inspection. Owner will be on site for further discussion and to sign the Order.
