Observation (CORRECTED DURING INSPECTION): Hand wash station was blocked at time of inspection with a mixer, and no paper towels were present.
Corrective Action(s): Mixer was removed in front of the hand wash station. Paper towels were restocked at time of inspection. At no time is the hand wash station to be blocked. Accessibility is essential at all times for proper hand hygiene.

Observation: Following areas need to be addressed:
- Area underneath oven / cook line needs to be swept
- Dry storage area is cluttered and some debris is present behind the shelving
Corrective Action(s): Remove all grime and food products behind the oven / cook line, and organize the dry storage area. Ensure that all dry storage products are kept in lidded containers to protect them from contamination.

Comments

Routine inspection conducted. Area is generally in satisfactory sanitary condition. The following observations were made:

1. Temperatures
- Walk-in cooler at 3C
- Walk-in freezer at -15C
- Exterior stand-up white domestic freezer at -14C
- Beverage cooler at 1C
- Prep cooler (bottom) at 3C
- Prep cooler (top) at 5C *NOTE: ensure that the cooler is closed at all times when not in use*
- Temperature logs were maintained on a digital memo on owner's phone. It is preferable to keep logs in paper format so that your staff can update the logs when you are not present

2. Hygiene and Sanitizing
- Hand wash station was initially blocked by a mixer and did not come stocked with paper towels. This was corrected during the inspection
- Bleach spray bottle available at 200 ppm
- Wiping cloths were in sanitary condition during inspection - ensure that you discard them whenever they are soiled
- High-temperature dishwasher sanitizes at final rinse temperature of 71C at the plate (Min: 71C)
- Meat slicer was cleaned and sanitized after use
- Restrooms were in sanitary condition

3. Storage
- Food-grade disposable containers were organized in cabinets
- NOTE: Storage practices will need to be improved upon in the dry storage area. Separate non-food items from food-related items, and ensure that all open bags and containers of food are enclosed in containers with tight-fitted lids
- Soda fountain dispenser has broken down and will no longer be present. Operator states that it will be removed shortly

4. Pest Control
- No recent, visible signs of pest activity at time of inspection

5. Administrative
- Owner has FoodSafe 1
- Reminder: In the absence of the owner, at least one employee MUST have a valid FoodSafe 1 certification
- Permit posted and up-to-date
