Observation (CORRECTED DURING INSPECTION): No food-contact surface sanitizer was readily available for use at time of inspection.
Corrective Action(s): Food-contact surface sanitizer must be available for use during all hours of operation. Staff prepared bleach sanitizer solution at time of inspection. Reviewed mixing instructions: mix 1/2 tsp of bleach per litre of water for a concentration of 100 ppm chlorine residual. For larger 4 litre buckets, use a capful of bleach per bucket of water.

Observation (CORRECTED DURING INSPECTION): Opened tin cans of tomatoes/tomato sauce and mango pulp were stored in the cooler.
Corrective Action(s): Food must not be stored in tin cans once they have been opened. Staff transferred contents of opened tin cans to food-grade containers at time of inspection.

Observation: 2-door upright cooler measured 9C.
Corrective Action(s): By end of inspection, cooler was measured at 7C. Monitor the temperature of this cooler and if needed, service this cooler such that it is capable of maintaining temperatures at 4C or colder. If the temperature does not decrease to 4C within the next hour, empty this cooler until it has been repaired.

- Routine inspection conducted. Buffet service not in operation at this time.
- Hand washing sinks were accessible and properly supplied with hot/cold running water, liquid soap, and paper towels.
- High-temperature dishwasher reached 73C at the dish surface during rinse cycle. Good - minimum of 71C at the dish surface required.
- Bleach available for sanitizing. Ensure sanitizer solution is always readily available for use during hours of operation. See violation code 302 above.
- All other coolers measured 4C or less. See violation code 308 above for one cooler measured at 7C - 9C.
- Freezers measured -18C or less.
- Food preparation sink was being used for thawing of frozen vegetables. Good. Ensure to keep the cold water running for proper thawing.
- Accurate thermometers available. **Ensure to keep your daily temperature logs up to date.
- Equipment and utensils maintained in sanitary conditions.
- General sanitation satisfactory at time of inspection. **Increase the frequency of cleaning for your ventilation canopy filters if necessary. See violation code 306 above.
- Dry storage area satisfactory.
- No signs of pest activity noted at time of inspection.
