Observation: The wooden wall shelving above the two-compartment sink and the walls underneath the shelving at the end of the kitchen are accumulating grease.
Corrective Action(s): Clean and wipe with a sanitized cloth. Ensure that the aforementioned areas remain in sanitary condition.

3. Sieves and large utensils next to stand-up cooler were filled with debris and grime. Bottom of tray holding the utensils is soiled.)

Comments

Follow-up inspection to follow-up conducted on March 12, 2018 (RPT #: JMAA-AWSVYL).
Extensive cleaning has been completed. Facility is now in good sanitary condition - thank you for your efforts.

- Sanitizing pails are now in all food preparation areas of the kitchen, bleach solution contains 200 ppm chlorine residual for all sanitizing pails.
- Two-compartment sink no longer used to directly hold raw beef - ensure that food is always in a designated food contact surface such as a stainless steel bowl
- Knife holder and knives are in sanitary condition
- Wire shelving and floor of walk-in cooler has been cleaned and scrubbed. However, there are some residual pieces of paint that are left hanging from the wire shelving - the manager has removed these residual pieces of paint at time of inspection to ensure that they do not fall onto food containers
- Food in coolers were covered with a tight-fitting lid
- Dry storage containers have a scoop with the handle protruding out - good. Ensure that the handle does not contact the goods (e.g. flour, corn starch)
- Ventilation canopy was dismantled and cleaned, now in sanitary condition
- All foods are elevated off the floor

Recommendations:
To maintain your facility in good sanitary condition, please note the following:
- Routinely clean the ventilation canopy when you observe a significant accumulation of oil
- Mop and sweep all areas of the kitchen after each shift
- Add an easily cleanable (smooth, non-porous) liner on top of the wooden shelving
