Observation (CORRECTED DURING INSPECTION): Missing surface sanitizer at the time of the inspection. The staff prepared new sanitizer at 100ppm chlorine bleach at the time of the inspection.
Corrective Action(s): Prepare new surface sanitizer in designated buckets with presoaked wiping cloths. Surface sanitizer must be available at all time to sanitize food contact surfaces.

Observation: Double stacking of food items observed in the walk in cooler.
Corrective Action(s): Do not double stack. All food items must be covered with plastic wraps or tight fitting lids to protect from contamination.

Observation: Significant mouse droppings observed in the following areas:
- underneath the wire racks in the dry storage room
- on canned food products in the dry storage room
- near the back door of the dry storage room
Corrective Action(s): Clean and disinfect the areas noted above. Disinfection method discussed with the operator. Contact the pest control company. Submit the latest pest control report to the health inspector for review. Ensure to follow the recommendations by the pest control company.

Observation: Build up of food debris, grease, and dirt in the following areas:
- on the side of the fryer
- underneath the two compartment sink
- around the mop sink
- potato cutter/slicer
- underneath the prep table
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule for hard to reach areas.

Comments

- General sanitation needs improvement.
- Main handwashing station supplied with hot/cold running water, soap, and paper towels.
- Two compartment sink available for manual dishwashing. Sanitizer available at 100ppm chlorine bleach concentration.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

- All freezers: < or = -18C
- Thermometers available in coolers and freezers.
- Daily temperature log must be kept up to date.
