Observation (CORRECTED DURING INSPECTION): * Many wiping rags were found on counters and in unsanitary condition; many were discarded; operator to store in sanitary manner (eg. in sanitizer between use)
Corrective Action(s): * Ensure ALL wiping rags stored in sanitary manner in sanitzer between use (eg. 200 ppm bleach solution)

Observation: * Hand sink in kitchen was broken so there was no available hand sink in kitchen for purposes of hand washing and staff were using 2-compartment sink instead; this is unacceptable practise and sink must be working properly at all times for easy access to hand washing sink for staff to properly hand wash; soap and paper towels were missing at this sink too
Corrective Action(s): * Ensure ALL sinks working properly and maintained in proper working order with hot and cold potable running water; ensure all hand washing sinks have adequate soap and paper towels available at ALL times

Observation: * Some build up of grime/debris on food equipment and some storage areas that requires immediate cleaning attention; also, freezer unit had a lot of ice build up and requires repair/defrosting-- food covered in ice build up in freezer-- not acceptable food storage
Corrective Action(s): * Ensure all areas cleaned and maintained in sanitary condition; defrost freezer unit and maintain sanitary conditions

Observation (CORRECTED DURING INSPECTION): * Staff were not wearing proper hair protection or attire while handling food; staff addressed this immediately and put on hair protection and aprons; staff mentioned aprons were not laundered and needed to be cleaned
Corrective Action(s): * Ensure ALL staff wear proper hair protection and attire while handling food; provide adequate aprons/uniforms for staff to use that are clean and in sanitary condition

* Note: Repair hand sink in kitchen so working properly with hot and cold running water; ensure all sinks have liquid soap and paper towels
