Observation (CORRECTED DURING INSPECTION): One hand sink near the cook-line had the drain plugged.
Corrective Action(s): The operator removed the drain plug at the time of inspection. Ensure the hand washing sinks are always accessible during food preparation. Plugged drains in the hand washing sinks discourage frequent hand washing and pose a risk of contamination to food in the surrounding area thruogh splashing.

Observation: 1) Cooler handles and seals had build-up of food debris.
2) Hard to reach areas require cleaning. There is visible build up of grease and food debris behind the fryer, shelves, and storage racks.
3) The floor in the walk-in cooler requires cleaning.
Corrective Action(s): Deep clean the facility to ensure sanitary conditions. Build up of food debris on the floor and in hard to reach areas can attract pests. Date to be corrected by: June 29, 2021

Temperatures:
- New Domestic cooler: 3C
- New Domestic freezer (used only for ice-cream): -18C
- Sushi cooler: 3C
- Double door freezer: -22C
- New Preparation cooler: 2C
- Chest freezer: -20C
- Walk-in cooler: 4C
- Hot holding unit was not in use at the time of inspection.
- Hot holding rice cooker: 78C
- Old Domestic cooler is not in use according to the operator. The cooler contained water jugs.

- Sushi rice had an pH of 4.0

All units are equipped with accurate thermometers. Food probe thermometer was available on site.

Sanitation:
- Hand washing sinks were adequately equipped with hot/cold running water, liquid soap, and disposable paper towels.
- Ware washing sinks equipped with functional drain plugs.
- High temperature dishwasher achieved 75C at the dish surface after the final rinse cycle. Dine-in is voluntarily closed due to COVID-19. Facility is mainly using single-use containers.
- Household bleach was available on site. Sanitizer solution was at 200 ppm chlorine residual.
- Staff washroom was in satisfactory sanitary condition.

Storage and Pest Management:
- No signs of recent pest activity noted at the time of inspection.
- Pest proof bins are used for dry ingredient storage.
- Most items are covered when stored in coolers.

Administration:
- Operator has a valid FOODSAFE level 1 certification.
- Permit is posted.

NOTE: Sanitation logs should be maintained for the whole facility and the records should be available on site for review.

COVID-19 Safety:
- BCCDC signage is posted at the front entrance.
- Masks are mandatory. Signs are posted.
- Ground markings in place to allow for crowd control.
- Hand sanitizers are available and accessible.
- COVID-19 safety plan is available on site for review.
- Dining in is closed voluntarily.
