Follow up inspection.
Dishwasher now has a final sanitizing rinse of 71 C/ 160 F measured inside of the machine.
Operator advised that the machine was cleaned and the temperature test strip showed a colour change after cleaning.
Routinely clean the dishwasher and maintain so that the final sanitizing rinse is 160 F inside of the machine (this occurred when the final rinse water temperature gauge showed 186 F).
Check manufacturer's instructions regarding which cycle to use.
