Observation (CORRECTED DURING INSPECTION): No surface sanitizer available in the main kitchen. Surface sanitizer in spray bottle at front measured 0ppm chlorine bleach concentration.
Corrective Action(s): Staff prepared new sanitizer at 100ppm chlorine bleach concentration at the time of the inspection. Provide surface sanitizer at the front and back. Sanitizer must be available inside the main kitchen.

Corrective Action(s): Replace the soiled sticky traps. Clean up the cockroaches in the areas noted above. Call a professional pest control company for an assessment and control measures. Provide a copy of the summary report to the health inspector.

- Unable to access storage locker. This will be checked during the next follow up inspection.

Temperature control:
- Two coolers in the back of the kitchen < or = 4C
- Hot holding unit > 80C
- Front self serve topping coolers < or = 4C. Keep this area clean. Tongs must be cleaned after each use.
- Unable to verify temperature log. This must be available during the next follow up inspection.
