Observation (CORRECTED DURING INSPECTION): Soup stock observed in hot holding unit in kitchen at below 60 Degrees Celsius .
Operator indicate that the stock is taken out of cooler and put directly into hot holding unit not too long ago. The soup stock is going to be cooked again on stove before serving.
Correction: The stock is hot held within 2 hours, the hot holding unit is not appropriate for reheating the soup that was Stored in the cooler. Ensure stock is cooked on stove ,ensure all food items are reheated by cooking to 74 Degrees Celsius before hot holding.

3. Ensure scoop is situated in upright position with handle facing upward and not contacting the ice to prevent contamination

Walk-in cooler ' thermometers reading on the door at <40 Degrees Fahrenheit, temperature measured with probe thermometer at 8 Degrees Celsius (air temperature) and 6 Degrees Celsius (soup). Cooler was observed to be repeatedly open due to rush hour service. Ensure temperature is monitored periodically while in operation.
