Observation: 1. Walk in cooler fan cover, tubes on left side wall, walls and ceilings, have mould/dust/debris build up.
2. Rubber door seals of front two Pepsi coolers have mould growth.
3. Mould growth on inside lip and lid of ice machine, not touching any ice.
Corrective Action(s): 1. Clean inside walk in cooler. Correct within one week.
2. Clean door seals. Correct within one week.
3. Clean and sanitizer with bleach water as soon as possible.

Observation: White wire racks in Pepsi "beer" cooler in bar area has a lot of exposed rust. Mugs stored upside down on some racks.
Corrective Action(s): Immediately place mat on bottom racks to raise mugs above racks. Rusted racks to be replaced. Correct within 6 months.

*bleach water bucket at >200ppm Cl, discussed proper measurements for mixing - sanitizer should be 100-200ppm Cl
-counters are sanitized with cloth and bleach water
-glass washer sanitizing glasses at 50ppm Cl; glasses are soaked in bleach water, are manually scrubbed, and then put through glasswasher
-manual dishwashing sign left on site
-cutting board and knife used to slice lemons or limes - ensure they are washed, rinsed, and sanitized manually or put through high temperature dishwasher
