Observation (CORRECTED DURING INSPECTION): Hot holding (Meatballs) at 37c. Product was discarded. Temperature unit observed to be set at too low a temperature. This was increased at time of inspection. When set at "5" water temperature was tested at 66c.
Corrective Action(s): Hot holding items ie meatballs to be tested throughout the day to verify it is being properly hot held at a minimum of 60c. Marker pen was used to mark the correct settingon the hot holding unit.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): None of the 3 compartment sinks are able to hold water as stopper mechanisms for all 3 have failed.
Both spray bottles containing quat sanitizer tested below 200ppm. Product was discarded.
Corrective Action(s): Repair the stoppers so all 3 sinks can hold water when warewashing.
Rubber in all 3 stoppers were not seated properly creating an bad seal on all 3 sinks. This was fixed when the Manager came on site. Ensure empoyees are aware of how to properly seat the rubber seals.

Observation (CORRECTED DURING INSPECTION): All 3 sinks observed to not hold water
Corrective Action(s): Once Manager arrived on site the sinks were fixed as the rubber seal in all 3 sinks was not properly seated.

Observation (CORRECTED DURING INSPECTION): Sole employee on site does not have food safe level one or equivalent.
Corrective Action(s): There must be at least one employee on site who has food safe level one or equivalent when in operation.
When Manager arrived on site this was corrected ie Manager has food safe level 1 or equivalent.
