Follow up to Rpt # MBEK-BEJRRG.

- Deli slicer components (e.g. back side of blade, underneath sharpener guard, slider, front areas) were observed to be in clean condition. Ensure all staff are following manufacturer's directions that are posted on the wall for cleaning and sanitizing of the deli slicer.
- No opened canned foods observed
- No knives or other utensils stored in space between wall and table. Ensure all staff are aware that knives and other utensils are not to be stored in the space between tables and walls. It is recommended to provide a wall mounted commercial knife storage unit, metallic strip, or to designate a suitable container or drawer for storage of knives and other utensils in this area.
- Kitchen hand sinks are accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Quaternary ammonium compounds (quats) sanitizer was measured in labeled spray bottles and from the dispenser at 200 to 400 ppm quats. It was stated that dispensing unit was adjusted recently.*
*Note: Some manufacturers of quats sanitizer state that quats may be used up to 400 ppm for a no rinse food contact surface sanitizer--confirm with the manufacturer whether this quats solution may be used up to 400 ppm or have unit adjusted to 200 ppm quats. Dilute solution to 200 ppm quats in the interim. Quats test strips are available on site to verify concentrations (expiry date: January 2021).
