Observation (CORRECTED DURING INSPECTION): Equipment cannot be sanitized in the dishwasher as it is unable to reach 71C during the final rinse.
Corrective Action(s): Manual dishwashing is temporarily permitted.
1. Wash and rinse equipment in the dishwasher
2. Clean and sanitize one sink nearby
3. Fill up this sink with sanitizer
4. After equipment is run through the dishwasher, submerge it completely in the sanitizer for 2 minutes.
5. Allow equipment to air dry before using
6. Test the sanitizer with test strips to ensure that it is at 200 ppm. Replace the sanitizer if the concentration is below 200 ppm.
