- All hand washing sinks were properly supplied with liquid soap and paper towels
- Bleach sanitizer solution available at 200 ppm in main kitchen area, at sushi bar, and in server area - good. Ensure solution in buckets are changed every 4 hours or sooner if solution becomes visibly dirty.
- All in-use utensils were held in ice water- good. Ensure utensils are still washed and sanitized every 2 hours.
- Prep cooler is now at 4C.
- Cardboard lining shelves has been removed
- Half of the ventilation canopy has been cleaned. Other half to be done next week, on rotation. OK
- Interior of ice machine was observed to be clean
- Temperature logs have been started. Ensure to record temperatures of all coolers daily.
- All coolers equipped with accurate thermometers.
