Observation (CORRECTED DURING INSPECTION): Vegetable cutter was found to have dried food debris on the blade and plastic component after washing and sanitizing.
Corrective Action(s): Ensure all equipment is properly washed and sanitized to prevent potential cross contamination of foods. Items with dried food residue may require presoaking prior to washing. Equipment was soaked for washing and sanitizing at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Pizza line handwash station did not dispense soap at the time of inspection.
Corrective Action(s): Handwash stations must be accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels to facilitate proper handwashing. A pump dispenser of liquid hand soap was placed at the handwash station at the time of inspection.

Observation: 1) Liquid hand soap dispenser by the pizza line works intermittently.
2) Metal upright freezer has significant icing in the freezer unit and temperatures ranged from -6C to -10C.
Corrective Action(s): 1) Service automatic soap dispenser to ensure it can dispense soap to allow staff to wash hands properly.
2) Service freezer unit and ensure door seals for a good seal to prevent icing and loss of cold freezer air. Service request has already been submitted for freezer unit.

Comments

-Walk-in cooler was at 4C.
-Both pizza prep cooler were at 4C (top and bottom).
-Upright coolers were at 4C.
-White upright freezer was at -18C.
-Metal upright freezer ranged from -6C to -10C.
-Hot holding cabinet was greater than 60C (used for storage of pick up orders).
-Temperatures checked and recorded daily.
-High temperature dishwasher had a final rinse temperature of 80C on the dish surface (minimum 71C required for proper sanitizing).
-Quats sanitizer dispenser was at 200ppm. Sanitizer pails properly labelled and tested at 200ppm. Sanitizer is changed every 2 hours.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-General sanitation satisfactory at the time of inspection.
-Facility serviced by a professional pest control operator on a monthly basis (September report indicated 1 of 4 mechanical traps had evidence of pest activity).
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-Staff member FoodSafe Level 1 valid until April 24, 2023.
