Observation (CORRECTED DURING INSPECTION): Back chlorine sanitizer bucket measured >200ppm. No prepared chlorine sanitizer bucket available at the front food preparation area. Operator improperly prepare 2nd compartment sink to measure <50ppm chlorine.
Corrective Action(s): Prepare chlorine sanitizer buckets for the front and back kitchen area to measure at 100-200ppm chlorine (i.e.: 1/2 cap bleach to 1L water). 2nd compartment sanitizing sink dilution to measure 100-200ppm chlorine (i.e.: 5 caps to 1/4 full water of sink). Ensure all wiping cloths for food contact surfaces must be submerged in sanitizer solution buckets to prevent pathogen growth.

Observation (CORRECTED DURING INSPECTION): Cold water faucet of the front handwashing sink not dispensing cold water. Paper towel dispenser in the handwashing stations not dispensing paper towels. Paper towel available near the handwashing sink. Light fixture at the back storage not working.
Corrective Action(s): Service the cold water faucet of the front handwashing sink. Operator corrected cold water faucet at the front handwashing sink at the time of inspection. All handwashing sink must be well equipped with hot and cold running water, liquid soap, and paper towels. Service or install new paper towel dispenser at all handwashing sink and service light in the back storage area. Corrected by: November 16, 2022.

Routine Inspection conducted today.

Washroom handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Prep cooler and domestic stand-up coolers measured at 4C or lower. Domestic stand-up freezers at back of house measured at -18C. Chest freezer measured at -18C. Hot-holding unit measured at 60C or higher.
2-compartment sink available for manual ware washing. Bleach (chlorine) on-site.
Donair meats undergo secondary cooking steps.
No signs of pests observed.
Overall, facility is well organized.

NOTE: Operator informed that he/she has FOODSAFE Level 1 certificate. Inform that operator must present valid FOODSAFE Level 1 certificate upon inspector request for validation. Ensure FOODSAFE Level 1 certificate is on-site at all times for inspector to validate compliance. At least one staff must be on-site at all times with valid FOODSAFE Level 1.
