Observation: 1) Raw meat/tripes in mesh containers being stacked on top of another are placed on floor inside walk-in cooler.
2) Scoops stored in stagnant water.
Corrective Action(s): Ensure to have all food stored at least 6inch off the floor. Install more shelves in walk-in cooler as discussed at this time.
Ensure to have all scoops stored in ice water, never in room temperature water as reiterated at this time.

304 - Premises not free of pests [s. 26(a)]
Observation: Cockroach observed on floor by the dessert cooler at the back. Professional pest control company contracted. Recent report checked- new bait stations installed which are to take effect within 3-4 weeks. Dry food storage practice satisfactory.
Corrective Action(s): Ensure to have the pest control inspection done for March. Have the facility treated for cockroaches. Increase the frequency of pest control inspection to twice per month until situation improves. Send a copy of the invoice/reports to the health inspector.

DO NOT leave any food out on counters/shelves even during lunch/dinner rush until approved by the health inspector. Failure to comply with this may result in further enforcement action(s).

Observation: Pooling of water observed by the dishwashing area and in front of fish tanks. Numerous pots placed on floor under cooking equipment.
Corrective Action(s): Ensure to have the floors mopped on a regular basis during operation. Remove pots from floors (if in use, store properly in sanitary condition; if no longer in use, remove from the facility).

Observation: Floors throughout the kitchen require more frequent and better cleaning.
Corrective Action(s): Ensure to have floors cleaned after each shift (x2 per day). Remove all food debris/water from floors.

Routine inspection conducted:

- Handwashing stations adequately supplied with liquid soap, paper towels and hot/cold running water.
NOTE: Ensure to keep paper towels close to the handwashing sink at all times as discussed at this time.
- Coolers operating at/below 4'C; Freezers operating at -18'C.
- Hot-holding units operating above 60'C.
- 200ppm chlorine solution available in labelled spray bottles.
- High temperature dishwasher achieved 74.6'C at the plate level after final rinse.
- Glasswasher achieved minimum required concentration of chlorine (>50ppm) after final rinse.
- Ice machine satisfactory. Front Bar satisfactory.
- Fish tanks sanitation satisfactory. Clean pipes on a more regular basis.

NOTE: Spoke with operator on phone to discuss at the end of the inspection.

Follow-up inspection to be conducted on/before Friday, Mar 31, 2023.
