Observation: 0ppm chlorine is achieved at the rinse cycle. Currently, detergent - rinse aid - spot off connected, but no sanitizer.
Corrective Action(s): Ensure a sanitizer is connected to the dishwasher, so that the minimum level of 50ppm chlorine is achieved at the plate level after each rinse cycle. Manager had contacted the service company to have the sanitizer brought in and connected within today [CORRECT BY: TODAY]

Routine inspection conducted:

-Handwash station adequately supplied.
-Refrigeration temperatures within requirement.
-100ppm chlorine solution available in a labelled spray bottle.
-Tools in drawers maintained in sanitary condition.
-General food storage practice good.
-General maintenance and sanitation good at this time.

Kitchen not in operation until tomorrow morning. All utensils/dishware will be rewashed through the dishwasher after the sanitizer is connected, before initiating any food service for tomorrow's breakfast.

Follow-up inspection will be conducted tomorrow. Please contact the health inspector for any questions or concerns.
