Health permit posted in plain public view. Hand wash station equipped with liquid soap and paper towels. Chlorine sanitizer in spray bottle & bucket measured 100 ppm. Prep line coolers in front sushi area registered at 3-4 deg C. Upright coolers in the kitchen area registered at 3-4 deg C. Freezers registered at -20 to -21 deg C. Hot holding: rice was at 71 deg C; miso soup was at 74 deg C. Dishwasher final sanitizing rinse was at 75.8 deg C at plate surface. Test strips for chlorine and probe thermometer available on-site. Temperature log was well-maintained. Staff wearing clean aprons and hair restraint. No signs of pests observed. Premises was clean and organize at time of inspection. Washrooms were in sanitary condition. No issues or concerns at this time.
