**As discussed, please be wary of high hazard items such as potato slicers and metal grill brushes degrading and shedding metal parts
Dishwasher reached 71C in rinse cycle

Prep cooler 4C, inserts supplemented with ice. OK
Hot holding tray was <60C at time of inspection, but reheating back up to "high"
**If this machine is burning your gravy, try using a water bath on your flat top to keep above 60C without burning the product

Glass washer 50ppm chlorine sanitizer. Staff were knowledgeable in how to test
Sanitizer spray bottles measured 200ppm quats.
**Some bottles may have been mixed with the orange degreaser. Please be careful!
**Label all of your spray bottles
Drinking ice separate from cooling ice, however a barrier is still to be added to separate hoses from drinking ice
