Food not processed in a manner that makes it safe to eat [s. 14(1)] (Raw proteins are not getting probed or timed as a safety check for cooking. Staff on site at time of inspection were using a large analog wall clock to approximate 4min cooking time, and were unaware of probe requirements set out in corporate food safety plans.)

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Ice maker in very poor sanitary condition. Heavy layer of mould and algae growth observed in upper portion of machine where ice forms. Algae also observed on plastic flap in bottom portion of machine.)
Comments

All cooks on grill line have been supplied with probe thermometers and trained how to use them. Ensure raw proteins are getting checked for safe cooking temperatures.
Inserts have all been supplied with lids. As numerous items are now covered, labels have been put up to help staff locate the correct item.
Ice maker has been cleaned and sanitized as requested.
Dishwasher reached 50ppm after SECOND cycle. Allow dishwasher to sit for approx. 1 hour, then test again. If there is a 1 or 2 cycle lag for presence of sanitizer, call for servicing.
A foam door seal has been installed along edge of gate. Ensure the gap remains sealed. Check regularly
One mouse found in trap in back room. Pest control has been called for follow up
**Note** To clean rodent droppings:
- mix 9 parts water with 1 part bleach in a spray bottle
- spray over droppings, then clean up while still wet
Temperature logs appear to be in use correctly, however please don't guess on the values of test strips (values of 54ppm and 56ppm were observed on the logs)
