Observation (CORRECTED DURING INSPECTION): Surface sanitizer measured 0ppm chlorine bleach concentration.
Corrective Action(s): The operator prepared new sanitizer at 100ppm chlorine bleach concentration. Ensure to change out the sanitizer daily to retain effectiveness.

Observation (CORRECTED DURING INSPECTION): 1) Bowls and other utensils stored directly inside the back handwashing sink.
2) There is no soap/paper towels at the bar handwashing sink.
Corrective Action(s): 1) The operator removed the items. Keep this sink free of any equipment and other utensils. This is for handwashing only.
2) Provide soap/paper towels at the bar handwashing sink.

Observation: Multiple food items stored uncovered inside the coolers (both in the kitchen and in the back storage room).
Corrective Action(s): Cover all food items with proper lids or plastic wraps inside the coolers to protect the food from contamination.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up grease, dirt, and food debris in the following areas:
- on sliding doors of the upright cooler
- on doors of the coolers
- around the sinks
- around the stove top
- floors throughout the kitchen
- too much clutter in the dry storage room. You must store all food items at min 15cm off the floor to facilitate in cleaning.
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule for hard to reach areas.

Comments

- General sanitation needs improvement. See violation section above.
- All handwashing stations (middle/back of kitchen) supplied with cold/hot running water, soap, and paper towels.
- High temperature dishwasher achieved 78C at the plate's level during the final rinse cycle.
- Dry storage area has adequate space and wire racks. Dry food items stored min 15cm (6inches) off the floor.
- No signs of pest activity at the time of the inspection.
- FOODSAFE certified staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers: < or = 4C
- All freezers: < or = -18C
- Thermometers available in all coolers and freezers.
- Daily temperature log must be done and kept up to date.

Note: A new wall has been built to separate the bar area from the main kitchen. No other structural changes have been made.
