Really good posted dishwasher instructions related to operation.
walk in cooler less than 4 C.
Walk-in freezer less than -18 C.
Handwash stations good.

- Ice machine beginning to show development of things growing inside. Organic slimes noted. Needs a thorough cleaning. Make sure this unit is part of a regular cleaning and sanitizing schedule, and/or increase the frequency of cleaning to prevent contamination into the ice.
- Quats concentration in spray bottle very high. Measured over 500 ppm. "One pump" may be too much for spray bottle volume. Try 1/2 pump (or less if needed) to ensure a concentration closer to 200 ppm. Test strips left to audit ratio. Good idea to have instructions clearly marked on wall by sinks.
