-Prep cooler at 3 deg C.
-All freezers at -18 deg C or elss
-Thermometers available in all cold holding units.
-Surface sanitizer (bleach spray) @ 100ppm chlorine.
-No hot holding
-General sanitation satisfactory; no signs of pests
-Washrooms stocked with liquid soap, paper towels, hot/cold running water.
-Fumehood clean
