Observation (CORRECTED DURING INSPECTION): Spray bottle labelled as "Pink" that was identified by staff as a sanitizer had no detectable level of sanitizer. The chemical in the dispensing unit which staff stated they get the spray from also had a detergent (good - this is needed as grease build-up can happen very quick with raw meats) but the manufacturer's instructions clearly state that the product must be rinsed after application to prevent cross contamination.
Corrective Action(s): Ensure a 200ppm concentration of sanitizer and that staff rinse product off after it has been applied.

Observation: Several mouse droppings found throughout premise (exact locations reviewed with undersigned staff). Pest control company currently in twice a month - good
Corrective Action(s): Clean out all mouse droppings and continue to work with pest control company to work towards eradication.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Corner/diagonal shelf between 'cordon bleu' display freezer and long meat display cooler had a gap between it and the floor with some food build-up under it. Also a gap between the cabinet and grey water pipe under the hand wash station in the meat display area.
Corrective Action(s): Seal these areas up with a pest proof material to reduce the accumulation of food and help reduce movement of rodents through premise. Due: Oct 24, 2022

Observation: Several bottles of chemicals stored along the top shelf above the three compartment sink.
Corrective Action(s): Move these to a location where they are separate/below all food contact surfaces. One possible location would be in the bathroom on the existing shelves though installation of a lip/ledge would be recommended to prevent them from falling off. Another location could be the shelving under the counter across from the front meat display area. Correct by: Oct 24, 2022
