Observation (CORRECTED DURING INSPECTION): One huge bowl of filling for the samosas was left under ambient air temperature and measured with an internal temperature of 13C. Operator stated the samosas were being made.
Corrective Action(s): Decrease the portions of filling inside the bowl. Food preparation of potentially hazardous food must be finished within 2 hours and only take out the portion of filling that can be finished within the time frame.

Observation (CORRECTED DURING INSPECTION): Food debris observed on the mixer arm of the dough mixer. Food equipment should be maintained clean after each use.
Corrective Action(s): Clean and sanitize the dough mixer with bleach sanitizer. Ensure food equipment is cleaned and sanitized after each use.

2. Bags of onions and a bag of corn was stored on the floor at the back stair.
Corrective Action(s): 1. Ensure food stored inside the cooler is covered with a food-grade barrier such as saran wrap.
2. Dry food needs to be stored at least 6 inches from ground. Ensure onions and corn are stored off the ground. Correct by: today.
