Observation:
Observation #1: Stuck-on grease observed on the topside of the ventilation hood. It is coating the light sockets. [date to be corrected by: February 6, 2019]
Observation #2: Bar area showing a build of a debris underneath shelves and in the corners. Plastic is wrapped around a pipe?? [Date to be corrected by: Janaury 24, 2019]
Corrective Action(s): Corrective Action #1: Degrease the topside of the fume hood

Observation: Two lights missing in fume hood. Adequate lighting is required for cooking and cleaning purposes. Ceiling light beside fume hood in kitchen missing protective panel. Light bulbs do not appear shatter proof and therefore require a protective cover to prevent glass breakage in food prep area. [Date to be corrected by: February 6, 2019]
Corrective Action(s): Replace the missing lights in the fume hood. Obtain a panel to cover the light fixture on the ceiling.

Observation: Spray bottles in kitchen labelled 'bleach', yet contain the chemical quats (tested with strips). [Date to be corrected by: January 24, 2019]
Corrective Action(s): Re-label the spray bottles to say 'Quats Sanitizer.' Ensure that all chemical bottles have the correct label.

Low chemical dishwasher achieved 100 ppm chlorine sanitizer residual at the plate level upon final rinse (test strips). Operator has test strips, not expired. Results recorded daily.
All coolers operating at </= 4C; freezers operating at </= -18C; hot-holding at >/= 60C
Temperature records in-use for coolers and freezers
Foods are stored 6" off the ground, *mostly covered, labelled and with raw proteins below ready-to-eat foods
Glasswasher achieved >12.5 ppm iodine sanitizer residual at the glass level upon final rinse (test strips)
