Routine inspection conducted. The facility was not in operation at the time of inspection.

Note - Updated floor plan was verified at the time of inspection and the facility was constructed as per the approved plans.

Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Walk in cooler at 0C
- Walk in freezer at -23C
- 2 x undercounter coolers in bar area below 4C
- Hot holding units on site but not in use.

Storage:
- All food items were stored at least 6" off the floor.
- All food products were found either in original packaging or covered inside coolers.
- Shelving units are provided for storage.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- High temp mechanical dishwasher reached 76C on dish surface during rinse cycle.
- Glass dishwasher in bar area. Concentration of iodine recorded between 12.5-25ppm.
- 2 compartment dishwashing sink available for manual dishwashing.
- Large pots are washed in a large sink located in chemical room and sanitized with 200ppm bleach solution.
- Utensils and tongs were found in sanitary condition.
- Ice machines (x2) maintained in good sanitary condition.

Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Door sweeps are installed at the back door to prevent rodent entry.

Administrative:
- Operator has valid FoodSafe Level 1 certificate.

Recommendations:
- Once the facility is in operation, please store any miscellaneous stuff away from the food storage areas.
