Corrective Action(s): Move aforementioned items into cooling unit able to hold an air ambient temperature of 4C or lower.

Observation (CORRECTED DURING INSPECTION): Operator informed that they sanitize dishes with vinegar.
Corrective Action(s): All dishes, utensils, kitchen equipment must be washed, rinsed, and sanitized (using bleach) at 100ppm-200ppm chlorine, and air dried. Educated staff on proper manual warewashing.

Observation: Rodent droppings observed behind chest and stand-up freezer along the back hallway. Pest Control Company contracted monthly. Pest Control noted that no activity noted in August, July, June within the premises.
Corrective Action(s): Clean and sanitize the aforementioned areas. Ensure that daily cleaning of premises to prevent possible cross contamination. Corrected by: August 19, 2022.
