Observation (CORRECTED DURING INSPECTION): Frozen meats were stored at room temperature and were beginning to thaw. Staff stated the meat was taken out to clean the cooler units.
Corrective Action(s): Potentially hazardous foods must be stored at or below 4C to prevent the growth of pathogens and or the formation of toxins. If frozen foods are removed from the cooler unit, ensure they are returned to the cooler as soon as possible or place foods in another cooler unit when cleaning cooler units. Foods were returned to the cooler at the time of inspection.

Comments

-Walk-in cooler (cutting area) was at 4C.
-Walk-in freezer was at -18C.
-Back storage area cooler units were at 4C.
-Back storage area freezer units ranged from -11C to -18C.
-Front area walk-in cooler was at 4C.
-Front display coolers were both at 4C.
-Front beverage cooler (yogurt beverage) was at 4C.
-Front display freezer was at -13C.
-Cleaning and sanitizing carried out in 3-compartment sink.
-Quats sanitizer dispenser and spray bottles were at 200ppm. Quats sanitizer spray bottle properly labelled.
-Equipment sanitized between cutting jobs (approximately 30-40 minutes). Deep cleaning and sanitizing carried out at the end of the day.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Foods produced for the facility are from approved sources.
-Random selection of foods in the front storage area were in good condition and within their best before dates.
-General sanitation good at the time of inspection.
-A few droppings were observed in the facility. Facility serviced by a professional pest control operator on a monthly basis. Significant improvement observed regarding pests.
-Washroom clean and well maintained.
