Observation (CORRECTED DURING INSPECTION): Found round pizza cutter sitting between marble counter and wall.
Corrective Action(s): Do not store knives, cutters, etc between counters and walls as this area is not routinely sanitized and can contaminate the equipment. Keep all utensils in proper holders or on the counter.

Observation (CORRECTED DURING INSPECTION): 1. Found sanitizer spray bottle in front food handling area to have 0 ppm quat.
2. Found equipment being soaked in industrial floor cleaner in 3 compartment sink.
Corrective Action(s): 1. Ensure all staff know how to properly fill sanitizer spray bottles from dispenser, new bottle was 200 ppm quat
2. Change bottle on liquid soap dispenser to proper soap, ensure all staff pay attention to which bottle they are using to replace empty products.

Corrective Action(s): Remove cardboard from shelves as it is not easily washable and can harbor pests.

Observation: 1. Pizza cooler was 12 C at time of arrival, plugged in 1 hour prior. Food came from walk in cooler was 4 C or colder.
2. Found metal sifter to be heavily broken and frayed sitting inside flour for counter.
Corrective Action(s): 1. Do not unplug cooler over night as it does not cool down quick enough to keep foods below 4 C during first couple hours of operation. If need to unplug to clean at night, re-plug in after cleaning is completed.
2. Discard immediately to prevent metal particulates from entering food.
Ensure all equipment is in good condition, replace items as needed.
