Observation (CORRECTED DURING INSPECTION): In one of the raw meat display cases, there are individually packaged containers of ready to eat potato salad and individually packaged ready to eat sauce (the red sauce) stored right next to the tray of raw marinated beef/steaks.
Corrective Action(s): There must be a separation or barrier between all raw meats and the ready to eat items. This will prevent any potential cross contamination of the between the raw and ready to eat food items.

Comments

Note: all meats sold in facility are raw and customers are expected to cook the meats after purchase (no meats are ready to eat). There are some ready to eat items sold at the store (Potato salad, coleslaw, sauces). Operator had previously used the rotisserie oven in the back to prepare oven cooked chickens but is currently not doing this.
-Handsink equipped with hot/cold running water, liquid soap, and paper towels
-Walk in cooler at 3.2 deg C
-Walk in freezer: -16 deg C
-All meat display coolers at <4 deg C
-Thermometers available in coolers
-Dry storage area in back is organized, foods stored off the floor
-3 compartment sink with bleach available on site to sanitize. Staff understand the proper 3 sink dishwashing method. Dishwashing sign is present
-Bleach spray sanitizer at 100 ppm chlorine residual
-General sanitation good, no signs of pests
-Operator has FoodSafe certificate (expiry in 2020) posted on the wall
