Observation (CORRECTED DURING INSPECTION): Tongs for raw chicken located at cook line were observed with handle in contact with raw chicken.
Corrective Action(s): Tongs were placed into dishwashing area to be washed and sanitized. Ensure that tongs are stored so that handles are not in contact with food to limit the potential for cross contamination.

Observation: Food debris, grease, and/or dust observed in the following areas:
1. Door seals of prep line coolers
2. Floor of cook line (centre area)
3. Small amount of dust on walk in cooler fan covers and ceiling
Corrective Action(s): Ensure that the above-noted areas are properly cleaned. Food debris and/or grease may attract pest activity. Dust may potentially fall onto foods located below. Date to be corrected by: December 19, 2018.

Observation (CORRECTED DURING INSPECTION): The following equipment/utensils were observed with duct tape on handles:
1. One burger flipper
2. Two pans
Corrective Action(s): Items removed from storage areas by management. Taped surfaces are not suitable as they cannot be adequately cleaned and sanitized.

Routine inspection conducted:

- Coolers at 4 degrees C or less (kitchen and bar areas)
- Freezers at -13 to -24 degrees C (Ice cream freezer: -13 degrees C. In frequent use at time of inspection.)
- Hot holding internal food temperatures at 60 degrees C or more
- Thermometers available inside cold holding units
- At least one probe thermometer available on site
- Raw and ready-to-eat foods are properly organized
- Hand washing stations are unobstructed and supplied with warm running water, liquid hand soap, and single use paper towels.
- Quaternary ammonium compounds (quats) sanitizer measured at 200 to 400 ppm in labeled spray bottles, sanitizer pails, and from both dispensing units.
- High temperature dishwasher measured 74 degrees C at the utensil surface during the final rinse (minimum: 71 degrees C at the utensil surface)
- Bar glass washer measured 12.5 ppm iodine in rinse residual (required: 12.5 to 25 ppm iodine)
- Ice bins and ice machine ice contact surfaces observed to be in sanitary condition. Ice scoops stored safely. Ice machine staff cleaning log is up-to-date.
- In use utensils stored in ice water
- Personal items such as coats and bags stored in an area away from food
- Washrooms maintained in clean condition
- No pest concerns observed at time of inspection. Premises is serviced by a pest control operator on a monthly basis. Most recent report (November 2018) stated no pest activities were noted at the time of service (interior).
- FOODSAFE requirements met at time of inspection. Certificate produced for staff member on site is valid until 2023.
