Observation (CORRECTED DURING INSPECTION): Front of the house QUAT sanitizer bottles detected less than 50 ppm. The solution was too old and needed to be replaced.
Corrective Action(s): Ensure to refill QUAT solution often to ensure adequate sanitization of food contact surfaces. Test for chemical concentration of QUATs .200 ppm to 400 ppm is required. Sanitizer solutions should be changed out every shift or when the bottle or bucket becomes dirty.

Temperature holding is adequate and in use with accurate thermometers and logs.

Dishwasher final rinse at 71C at the plate.
Note: This unit's booster water temperature drops with consecutive use. Ensure the sanitizing step inside the machine can reach 71C and above for all loads. As the temperature gets colder, it is recommended to turn up the water temperature to this machine to ensure an adequate sanitizing step.
