- Temperature Control: Food Safety Audits reviewed this date. No concerns noted. Audits being conducted on a regular basis..
- Manual Dishwashing: (4 Step) - Quats.
- Ensure all food contact surfaces (tongs, spatulas) are being washed and disinfected after use or on a timely manner. (ie: 3-4 hours)
- Ensure all items are to be stored in a sanitary manner in order to prevent post contamination. (Clean/organized shelving - Stored upside down, etc.) Soiled articles are not permitted within the storage shelving - monitor. Shelving unit is to be kept clean and organized.
- Wiping cloth storage: (Chlorine) No issues noted.
- Food Storage: No concerns noted. Dating/monitoring occurring. First In - First Out approach.
- Sanitary Facilities: Single use towels are to be kept stored inside dispensers at all times.
- Chemical Storage: Ok.
- Staff Illness/Hygiene: Discussed.
- Sanitation: Improvements noted. Continue efforts to clean all "hard to reach" areas (below/under equipment) on a regular basis.
- Equipment: Refer to Violation Notes.
- Pest Control: An active Pest Control Program is currently in place. Pest control reports are to be kept on site for review. Review company recommendations.
