Observation (CORRECTED DURING INSPECTION): Meatballs in the hot holding unit ranged from 48C to 60C. The meatballs were just reheated in the microwave.
Corrective Action(s): Ensure meatballs are rapidly reheated to 74C or more prior to placing into hot holding unit. Use the probe portion of the thermometer to verify the internal temperature of the food and not the laser. Meatballs were reheated to 74C at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Sandwich coolers were at 4C (both units).
-Undercounter cooler was at 4C.
-Walk-in freezer was at -12C (defrost).
-Temperatures are checked and recorded daily.
-Cleaning and sanitizing carried out in 3-compartment sink. Quats sanitizing solution was tested at 200ppm.
-Handwash station easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff observed practicing proper single use glove practices.
-Quats sanitizer spray bottle properly labelled and tested at 200ppm.
-Vegetable slicer was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Foods stored off the floor and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary.
-FoodSafe Level 1 valid.
