Observation (CORRECTED DURING INSPECTION): Noted a stock pot (chicken sauce) being cooled in the walk in cooler. Temperature of the chicken sauce was taken at 18oC. The staff stated the sauce was warmed up 3 hours ago.
Corrective Action(s): This not a proper cooling practice. Ensure to cool large volume of food/liquid:
1. Under cold running water
2. Stir occasionally
3. Divide into smaller pots or pans

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach water spray bottles were broken and had no residual chlorine.
Corrective Action(s): Bleach water spray bottles must be functioning properly to sanitize all food contact surfaces. Prepare all bleach water spray bottles fresh everyday in the morning.
All broken bleach water spray bottles were replaced during inspetion.
Directed the facility to re-sanitize all food contact surfaces during inspection.

Observation (CORRECTED DURING INSPECTION): 3 handsinks in the main kitchen and 1 handsink in the dimsum preparation area were not fully equipped with liquid soap, paper towel, and hot/cold running water supply.
Corrective Action(s): 1. Never block the handsink at all time
2. Always stock liquid soap and paper towel
3. Always turn on hot/cold water valves

Observation: 1. Noted 2 dead cockroaches in the back closet
2. Noted flies in the dishwashing area
Corrective Action(s): 1. Remove dead cockroahes in the back closet. Monthly pest control place in service. Ensure to keep the area dry and clean out the crumbs on the floor.
2. Keep the dishwashing area dry, especially overnight.
Contact the pest control service to address the issues. Contact today.
