Observation (CORRECTED DURING INSPECTION): Rodent droppings observed throughout premises (storage area, meat cutting room, near/on equipment located by back door and behind pelllets used for pop cans).
Corrective Action(s): Remove all droppings and sanitize . Dropping should be removed daily.

Comments

- Handwashing sinks available and fully equipped.
- High temperature dishwasher registered at >71C.
-Sanitizer spray bottles registered at ~ 200ppm for quats.
*Sanitizer bucket at front registered at ~50ppm for quats - staff created new solution of 200ppm quats.
-Coolers (except sandwich cooler) at 4C or below.
*Temperature logs to be maintained daily.
-Walk in freezer and standing freezer registered at -14C.
*Adjust so that both are -18C or colder.
-Hot holding 7/6C good.
-Pest control services in place. Pest management has improved since last inspection however more work is still required (cleaning/removing droppings more frequently)> No obvious entry points noted during inspection.
-Food is kept six inches off the floor.
-Walk-in cooler and walk-in freezer kept clean and organized.
Note: Permit to operate not posted. A replacement permit can be requested from our office permit replacement fee is $30.00.
* All surfaces should be sanitized prior to using/first thing when facility opens.
