All hand wash stations were fully equipped with soap, paper towel, hot and cold running water.
All coolers 4C or less (walk in, display cases..etc)
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Good separation of raw meat and sea food and ready to eat items (salmon nugget, smoked prawn, cooked shrimp) storage/processing areas noted. Discussed sanitizing after changing raw meat products.
All ready to eat items come in premade and precut - no further processing.
Raw meat processing room temperature: 9C
Quat sanitizer at both warewashing sinks (one in refrigerated room and one in the front service area) both 200ppm.
Manual ware washing procedures reviewed at time of inspection – no concerns.
