Observation (CORRECTED DURING INSPECTION): Dish detergent being used for handwashing at the main handwashing station in the main kitchen.
Corrective Action(s): Staff provided liquid hand soap in the kitchen. Ensure to properly wash hands prior to food handling.

Observation: The side door at the front cashier table was kept opened during the inspection.

Observation: Grease build up on the ventilation hood. Professional cleaning schedule is overdue (due in May 14, 2023).
Corrective Action(s): Call a professional cleaning company to clean the ventilation hood/exhaust system along the cooking line.

Comments

- General sanitation is satisfactory.
- Dishwasher dispensed 50ppm chlorine bleach concentration at 46C at the plate's level during the final rinse cycle.
- Surface sanitizer stored in designated bucket (in the kitchen) at 100ppm chlorine bleach concentration.
- Dry storage room (outside kitchen) has adequate space and wire racks.
- No signs of pest activity at the time of the inspection. Unable to verify pest management system. Manager to submit the latest three pest control summary reports to the health inspector for review.
- Washrooms appear to be in sanitary condition. Handwashing stations fully stocked.
- Operating Permit with a valid decal posted in a conspicuous area.

Temperature control:
- All coolers < or = 4C
- All freezers < or = -18C
- Rice cooker = 66C
- Working thermometers inside refrigeration units.
