302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): A) Did not detect any sanitizer in container with cloths submerged. Staff member remade chlorine sanitizer solution at time of inspection.
B) Meat slicer still had dried food debris and grease on it. Staff said meat slicer was used last night but did not want to take the slicer a part to wash/sanitize it. They preferred to wait for the owner to do it.
Corrective Action(s): A) Ensure sanitizer solution is changed as needed throughout the day. Reminded staff to mix bleach into water after adding to ensure sanitizer is consistent in concentration.
B) Ensure meat slicer is taken a part and properly wash/sanitized after each use. A follow up inspection will be conducted tomorrow to ensure corrective action was taken.

Observation: Noted the hot water tap at the two compartment sink was broken and repaired with a wrench used to turn the tap. Staff member on duty said that operator is looking into getting that fixed.
Corrective Action(s): Repair/replace tap so it is suitable design and in good working order.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Noted wall that has been worn out still has corrugated sheet installed up against it. Corrugated sheets can not be washed and sanitized.
Corrective Action(s): Rove corrugated sheet and repair the wall so that it is smooth and washable.

All coolers 4⁰C or less (prep cooler unit, upright cooler, walk in cooler unit, undercounter cooler units at bar...etc)
Freezers (chest freezers x3, upright one door freezer unit...etc) less than -18C
No hot holding units available at time of inspection. Lunch rush had finished.
General sanitation satisfactory.
No obvious signs of pest activity. Back door to outside hallway was closed at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Low temperature dish washer had 50ppm chlorine. Test strips available to check.
Door to staff washroom is self closing.
All stored foods appeared protected (ie. stored off the ground, covered...etc)
